
The Uviglie Castle rises on a charming hill to the east of Rosignano,
about 8 km. from Casale Monferrato; it is encompassed by 150 ha.
of ground of which 18 are vineyards.
The maturing of the grapes is constantly monitored and then they
are taken to the cellar and pressed in stainless steel presses which
also separate the stalks. The juice is then put in vats for fermentation
and the transformation into wine.
The fermentation takes place at a controlled temperature of 18°
C to conserve the aromas and perfumes.
The wine is transferred into other vats at the end of the fermentation
period and is left to decanter for several months.
According to the market demand part of the wine is clarified and
stabilized by low temperatures; the rest, specially the Barbera,
is matured in oak casks and put into small barriques for ageing.
The cellar which has a modern bottling plant is divided into two
areas:
- Storage area, with a capacity of 3,464 ha. in stainless steel
insulated vats.
- Ageing area, with a capacity of 818,5 ha. in oak casks. |
