LE CAVE, queen of Monferrato. From the oldest vineyard of the Estate – and the highest in the area – located on the hill inside which the Caves of Pietra da Cantoni are dug, lives this award-winning Barbera, which for over thirty years has embraced tradition. The white calcareous soils, the exceptional exposure and careful vinification give a wine of great flavor and freshness, complexity and pleasantness.

Organoleptic Characteristics

Appearance: Intense and deep ruby ​​red

Nose: Great complexity and recognizability: black cherry, berries, blackberry, strawberry jam and redcurrant marry of hay, aromatic herbs and floral notes.

Taste profile: Harmonious, intense, full and exquisitely soft. The freshness of the palate meets the richness of the fruit and structure of the alcohol, resulting in great persistence.

Serving suggestions

Food pairings: Versatile, it loves tasty first courses, red and white meats, medium-aged cheeses.

Vinification

Selection of grapes, destemming, alcoholic and malolactic fermentation partly in concrete tanks and partly in stainless steel at controlled temperature with frequent pumping over. Aging in 25-55 HL French oak barrels for 18 months following aging in bottle for at least 12 months.
