Grignolino is an ancient grape variety, loved for its lightness, spiciness and typical delicate and inviting color. Appreciated as early as the Savoy dynasty and at the Court of the Kingdom of Italy, it is native to the hills of the Monferrato casalese, where the white, shallow limestone soils of the San Bastiano vineyard produce savory, elegant wines with notes of red fruits, white pepper and pleasant acidity.

Organoleptic Characteristics

Appearance: Faint ruby red.

Nose: Complex, rich in small red fruits and spices, rose hips, sage, white pepper, almond, macerated rose, violet.

Taste profile: Expresses the intensity of rosehip, sage, white pepper, almond, violet, cherry, raspberry and licorice root. The palate offers pleasant freshness with a lingering finish of blood orange and candied cherry.

Serving suggestions

Food pairings: Ideal for pairing with traditional Piedmont and Monferrato dishes, but Grignolino also appreciates seafood cuisine and light aperitifs.

Serving temperature: 14 - 16 °C Extremely pleasant chilled (12 - 14 °C)

Vinification

Grape selection, destemming, fermentation in stainless steel at controlled temperature with skin maceration and pumping over for 3-4 days. Malolactic fermentation and maturation in stainless steel to preserve freshness of aromas, bottling in early spring.
